Tomato Soup and Grilled Cheese

The month of February can still bring cold days and snow, depending on your city, so we're still considering it soup season. Tomato soup and grilled cheese is a much loved pairing that's sure to warm little tummies on a chilly day. We like to cut our grilled cheese sandwiches into strips (or little hearts...even if Valentine's Day has passed) to make it easy for small hands to dip. FInd our basic recipes below:
Grilled Cheese
Ingredients
2 slices of any bread your family likes,.we like using a thick bread.
1 Tablespoon softened butter
1 slice of cheddar cheese
1 slice of provolone
cream cheese (optional)
Warm cooking surface over medium heat. Coat 1 side of each piece of bread with softened butter. Next, on side of bread without butter, add the cheddar cheese, cream cheese if you're using, and top with provolone. Toast the bread, buttered side down, for 3 minutes. Place on top of bread with cheese and toast other side for an additiona 3 minutes. Cut before serving on side of the soup.
Tomato Soup
Ingredients
4 Cups of canned diced tomatoes
4 cups of tomato juice
4 ounces of butter
1 cup heavy cream
handful of basil leaves
salt and pepper to taste
In a sauce pan over medium heat, bring the tomatoes and tomato juice to a boil.
Add basil, reduce to simmer and simmer for 30 minutes.
Slowly stir in heavy cream and then softened butter until combined.
Serve warm with side of grilled cheese.
