Early Fall Snacks

I am not really the cook in our family... That's my husband's territory, but I can manage making quick easy bites with/for kids. Here are a few recipes I have picked out to jump into fall.

Peanut Butter Banana Roll-Ups

Perfect for a quick snack at home or on the go, these Peanut Butter Banana Wraps are sliced into bite-sized pieces that make snack time fun, delicious, and easy!

Step 1: Place your tortilla flat on a clean surface or plate, then spread an even layer of peanut butter across the entire tortilla.

Step 2: Lay a whole banana along the left side of the tortilla (as shown in picture). For extra sweetness, drizzle a little honey across the tortilla.

Step 3: Roll the tortilla tightly from left to right, wrapping it around the banana. Once rolled, slice it into 1-inch sections to create bite-sized roll-ups.

Step 4: Arrange the roll-ups on a plate, or pack them into an airtight container if you’re taking them on the go. Enjoy!

Notes:

  • Nut Butter Options: Swap peanut butter for another favorite- like almond butter, cashew butter, or even Nutella if you’d like a sweeter twist. Feel free to experiment and see what you enjoy most!

  • Optional Toppings: Try adding granola, shredded coconut, chocolate chips, or any other desired toppings for added crunch and flavor.

  • Kid-Friendly Tip: For little ones, cut into smaller pieces and skip hard/crunchy toppings for easier bites.

Pumpkin Spice Energy Bites

I am a big fan of all things pumpkin spice- The ultimate fall cliche. In addition to lattes and pancakes, Siggi's Pumpkin & Spice Skyr is a favorite. It packs a decent amount of protein into a little cup. This year I tried out their Pumpkin & Spice Energy Bites, and they were a simple healthy snack, and not too sweet. If you want to add some sweetness, I'd recommend adding a bit of honey.

Mini Sweet Potato Muffins

These mini sweet potato muffins were always a big hit with my kids and I plan on making them for their kids one day. This is an older recipe from the site Weelicious and it is a keeper. Click on the link below for the full recipe:
